According to the results of our study, the use of cherry tonneaux in the aging of red wines significantly influenced:
• The complexity of the wines by increasing the cherry and red fruit notes.
• The color intensity and pigment with highest levels of color intensity compared to wines aged in other conditions.
• Give unique sensory characteristics to the finished wines which are becoming more desirable among consumers.
